One pot Chicken Curry

One pot creation for a quick and easy dinner. Serves 4.


3 large chicken breasts, diced

1 onion, finely sliced

1 clove of garlic, finely chopped

1 dessertspoon garam masala spice

1 dessertspoon mild curry powder

1 dessertspoon ground turmeric

1 dessertspoon ground cumin

1 dessertspoon ground coriander

1 dessertspoon ground ginger

3 tins of chopped tomatoes

500g natural fat free yogurt

15ml oil


Heat oil in a pan.

Add onions and garlic

Stir until golden brown

Add chicken and stir until chicken is cooked

Add ALL spices and stir

Add tinned tomatoes and stir occasionally on a medium heat to reduce excess liquid

Add the yogurt and stir.

Leave on a low/medium heat to reduce any excess liquid

Serve with rice and naan bread

*to make it spicier for an adult palate then add hot curry powder and/or jalapeno peppers
