Pasta pesto

Pasta, pesto, cherry tomatoes & cheese Serves 1


1 tablespoon pasta

2 Cherry tomatoes

1 tablespoon pesto

1 tablespoon grated cheese


Cook pasta as per the packet instructions

Roughly chop the tomatoes into bite size pieces

Once pasta is cooked, drain and tip into a bowl

Add the tomatoes, pesto and grated cheese and mix well

Season with salt and pepper if required

Serve with batons of cucumber

This can be kept in the fridge for a few days and served cold too.

My recipe is very quick and easy. No weighing of ingredients! Ideal for a healthy lunch.
